Pineapple Mango Smoothie

So, I had a nice pineapple staring me down on my countertop this morning and a fresh mango in my refrigerator. I googled for a recipe for a smoothie and most of them contain milk or yogurt. While I could have substituted Silk yogurt for the traditional, I opted for a non-creamy version containing:

1 Ripe Mango
1/2 Ripe Golden Pineapple (Organic preferred)
Coconut Juice about 1 Cup

Blend everything together INCLUDING THE CORE in Vita-Mix. Not sure if a regular blender will tear through a pineapple core...but you can give it a shot if you don't hold me liable if your motor burns up! Speaking on pineapple, I am so surprised at the difference between organic and non-organic fruit! First off, organic pineapples usually are about 1/2 the size of traditional fruits. The taste of an organic is much sweeter and the pineapple-y flavor is much better in organic products. Buy organic when you can. This morning I used a HUGE non-organic pineapple because that was all my grocery store had at the time (Mackenthun's in Waconia, MN). Normally I purchase all of my produce at Lakewinds in Chanhassen, MN (www.lakewinds.com) but had to run to the "regular" grocery store for a few things.

Back to the smoothie. If it turns out too thick you can always make it thinner by adding more coconut juice or coconut water. I like to stick to coconut because it adds a nice flavor but you can use water, OJ or any other liquid if you prefer. Enjoy!
