Apricot Filing for Hamantaschen


Ok so I decided that the first batch of Hamantaschen that I made was not going to be enough and I just started working on a second batch. The dough recipe is derived from the PPK's (www.theppk.com) version of the Fig Newton. Last time I did a prune version so this time I wanted to do an apricot filing.

I only had dried apricots and most recipes call for apricot preserves. I decided to skip a trip to the grocery store and improvise! The result is a sucess and I used:

2 Cups Dried Apricots
3-4 Tbsp of Lemon Juice
1/2 C Water
Cane Sugar Crystals to Taste (I used about 1/8 C)
1/2 C Dried Coconut

Combine everything EXCEPT the coconut in a blender and blend until mixture is a puree. You don't want any lumps of dried apricot in the filing so make sure this is a thorough blending. After you have puree'ed these ingredients transfer to a mixing bowl and fold in the dried coconut. Cover with plastic wrap and refrigerate until your dough is ready.
