Red Potato Salad


Well, Jason has been doing most of the work on here, but I made this potato salad today and had to share it with everyone. If you like a traditional Potato Salad you will like this.

Ingredients:
~ 6-7 medium-large red potatoes
~ 2 cloves garlic, minced
~ 1 Cup soy mayonnaise ( I used Veganaise)
~ 1 Tablespoon mustard
~ 1 Tablespoon apple cider vinegar
~ 2 teaspoons lemon juice
~ 1 teaspoon sugar
~ 1/4 teaspoon salt
~ little bit of onion powder
~ little bit of celery salt

Rinse potatoes and boil in a large pot with a pinch of salt. Once the potatoes are cooked through (don't overcook), drain, and rinse with cold water. Once cool enough to handle, dice the potatoes. Set potatoes aside to cool more while you make your sauce. Combine all remaining ingredients in a seperate bowl and whisk together. Combine sauce and potatoes and put in refrigerator until ready to serve. Add a dash of Paprika if you would like to top it off with some color. Enjoy!

Note: Celery isn't one of my favorites but can be added to this salad easily to create more texture, color and flavor.
